The only diagrams of VPN connections I seem to find show the client
connected via ISP to the internet, and the VPN server connected
directly to the internet - I can see how that is set up. However, what
of the following case:

Computer A (client) connects to the internet via broadband to ISP A.
The server is behind a router/firewall/VPN server which connects to
the internet via Broadband to ISP B. The two ISPs are different.

So how do I setup my client to actually get all the wat through two
different ISPs to the server?

It makes no difference what ISP each end is connected to. That's kinda
the point of VPN. Since it is so integral to the whole concept of VPN
this bit of info is considered a trivial detail and isn't explicitly
mentioned in a network diagram. Usually most VPN diagrams will simply
show a cloud labelled Internet between the two sites. That indicates
that it does not matter what ISP the two ends connect to as long as they
have full internet access.
